Merlot - Red as our passion. At harvest sunset, red is the night that turns grapes into wine. Colour: deep ruby red colour. Aromas perceived: aroma of berries and spices, with light notes of vanilla. Taste: dry and harmonious, fresh with a pleasant persistent aftertaste. Pairing: to be served in large glasses at a temperature of 8-12 °C. Merlot goes very well with white and red meat dishes, grilled meats and aged cheeses. Vinification & Aging: after pressing the grapes, a cold maceration and fermentation takes place in contact with the skins for over 10 days at a controlled temperature. Subsequently, the wine ages for 12 months in large oak barrels followed by a brief refinement in the bottle. The final product is dealcoholized with a lowpressure osmosis process and pasteurized to avoid the use of preservatives and additives.
